@Neo_Kesha I guess I must be using an old version of NST Explorer, I never get any confirmation messages but it also doesn't say anything about a "chocolate edition" so I'll have to check that once I've managed to get Windows booting again...
As I said in the OP, the NST Explorer should create backup files called L101_NSanityBeach.pak.patch_bak etc (unless this has changed in an update as well) and if you delete the modded pak files and rename these backups back to .pak then the mod should be uninstalled. I have my own backups so I haven't actually tried this method but even if it doesn't work you can restore the original pak files by using the verify file option in Steam.
Re: the level editor stuff - since I've now found a method of adding lots of extra crates to levels I'm still trying to get a better understanding of how stuff like that works and I'll post more about it soon (if I can ever fix my computer and resume experimenting).
